Kolkata Style Chicken Biryani
Hi, I am going to prepare Kolkata style Chicken Biryani.
Chicken Biryani Recipe step by stepIngredients:1 kg Chicken 500 gram Basmati rice 1 & 1/2 cup Yoghurt Egg Potato 1 piece Nutmeg 2-3 full flower of Javitri Sha jeera, Sha Mirchi 3 Large & 5-6 small Cardamon 6-7 stick Cinnamon 10-12 Cloves 25-30 Bay leaves 2 pinch Saffron 1 cup Milk Pinch of yellow food color 5-6 Rose petals 7-8 Onion 2 full Garlic 1 Ginger full 100 gram Ghee 250 gram Edible oil Salt Turmeric powder 2 teaspoon Mirchi powder 3-4 teaspoon Kashmiri Mirchi powder 2-3 teaspoon Sugar 3-4 teaspoon Kewra water 6-7 teaspoon Meetha attar 2 drops 3 teaspoons of cumin powder 3 teaspoons of coriander powder 1 Lemon Hi, I am going to prepare Kolkata style Chicken Biryani. So some rules need to follow ... 1) Add some saffron into a cup of milk with 2 drops of meetha attar and a pinch of yellow food color. 2) Need to marinate the chicken overnight. 3) Prepare biryani masala before marination Cumin seeds(shah jeera) 1 teaspoon, White pepper(shah morich) 1/4 teaspoon, rose petals 5-6 dried, javitri 1 full flower, 3 cardamom, 2 stick cinnamon, 1 clove, 4 black pepper grind to get a fine powder. 4) Soak the basmati rice into the water and add lemon juice. The process to marinate the chicken:1) Clean & wash the chicken pieces( large pieces recommend leg and breast pieces) 2) Add 1 & 1/2 cup of yoghurt to 1 kg of Chicken, add 2 teaspoons of biryani masala, 3 teaspoons of cumin powder, 3 teaspoons of coriander powder, 4-5 medium-sized crushed fried onions, 2 tablespoons of garlic paste, 1 tablespoon of ginger paste, 3 teaspoons of kewra water, salt according to taste, turmeric powder 2 teaspoons, Mirchi powder 3-4 teaspoon, Kashmiri Mirchi powder 2 teaspoons, sugar 3-4 teaspoon, 1 tablespoon of edible cooking oil, 2 bay leaves. 3) Marinate the chicken well and cover & refrigerate it overnight. Now in morning Soak the basmati rice in water with lemon juice for 1 hour. After an hour drain the extra water out and keep it aside. Cook the chicken:1) Add oil and 1 tablespoon of ghee in the kadhai and heat it then add 2 pcs of large cardamom, 1 stick of cinnamon, 2 cloves, 1 full flower of javitri broken, slightly fry add 2 medium-sized onion slice fry until it turns golden brown. 2) now add the marinated chicken cook it well until the oil gets separated. Prepare the rice:1) Add oil and 1 tablespoon of ghee in a handi. Add 1 teaspoon of Sha jeera, 1 flower of javitri crushed, 1/2 nutmeg, 2 large cardamoms, 1 stick of cinnamon, 3 small cardamom, 4-5 cloves and 2-3 black pepper, 2 bay leaves. Fry it slightly then pour water into it. 2) When the water is started to boiling add the soaked rice into it. Boil the rice until it cooked 70%. 3) Drain the water and spread the 70% cooked rice in open. Fry the potato:1) Peel off the potatoes and cut it into the large size and boil it then add some salt and yellow food colour into it and then fry it. 2) If you want to make it special by adding boiled eggs then you can add. Boil the egg and peel it off. Now it's time for layering:1) Take a big handi to pour an adequate amount of ghee into the container and spread all over inside the handi. Place 20-30 bay leaves underneath then place the chicken first over the bay leaves. 2) Bay leaves are kept underneath to prevent the chicken to stick in the handi. Ok then spread the rice and make it a layer, then add potato and chicken and again rice followed by potato, eggs and chicken and rice again. 3) Now spread the curry over the layer of rice pour the saffron milk and 2 more spoons of kewra water. And spread some fried onions over it. 4) Now cover the handi with lid and tighten the handi lid with atta dough such that the smell of ingredients couldn't pass out of the handi. 5) Place the handi for first 15 minutes over a Pan(tawa) in high flame and again in lower flame for the next 15 mins. Now Kolkata Style Chicken Biryani ready to serve with yoghurt Raita. |
