Punjabi Dum Aloo recipe IngredientsTo cook potatoes:
12-15 small potatoes
To put water in the cooker according to need
2-3 tsp oil
To make a paste:
1 tbsp oil
½ tsp fennel
4 inch cinnamon stick
2 small cardamoms
1 bay leaf
2 cloves
1 medium onion or 1 cup onion chopped into large pieces
½ inch piece ginger chopped
2 cloves Garlic chopped
1 green chilli cut into pieces
Finely ground 2 small or 1 cup tomato mixers
10-12 cashews
Salt to taste
To make Dum Aloo:
1 tbsp oil
1 tsp cumin seeds
1 ½ tsp red chili powder
2 tsp coriander powder
4 tsp turmeric
Salt to taste
1 tsp Kasuri Methi
Bring 2 tbsp heavy cream (Amul Fresh Cream, M)
½ cup water or according to need
1 tbsp coriander finely chopped
Punjabi dum aloo recipe methodCook Potato Recipe:
Step 1:
Boil small potatoes in the cooker: For this,
wash the potatoes well and take them in the cooker. Add so much water when
the potato gets submerged. Cover the cooker and cook it for 1 city.
Step 2:
When air comes out of the
cooker, remove the lid and remove the potato from the water.
Step 3:
When it becomes as cold as touching, then
peel it off. If your potatoes are large in size, then you cut them into two
or four pieces.
Step 4:
Now put 2-3 tbsp of oil in
a pan or pan and keep the flame on medium. Add potatoes to the hot oil and
mix it with a little salt.
Step 5:
Keep stirring it every 3-4
minutes and fry till it turns golden in color.
Step 6:
Later take it out in a plate
and keep it on the side.
Method of making paste:
Step 1:
Heat 1 table spoon of oil
in the pan. Add fennel seeds to the hot oil and fry for a while.
Step 2:
Later add the standing
spices (cinnamon, green cardamom, cloves and bay leaves) and roast for 30-40.
Step 3:
You will feel good aroma of
spices, then add chopped onion, ginger, garlic and green chili to it. Add a
little salt so the onion cooks quickly.
Step 4:
Roast the onion until it
becomes pink and soft.
Step 5:
Later add tomato and mix
and cook till it becomes soft.
Step 6:
Turn off the flame and
allow it to cool slightly.
Step 7:
After it cools down, take
it in the jar of the mixer. Add cashews together and grind it finely to make
a paste.
How to make Punjabi Dum Aloo:
Step 1:
Now wipe the same pan with
paper towel and heat the remaining 1 tbsp oil. Keep the flame on medium.
Step 2:
Once the oil is hot, add
cumin seeds and roast it for a while.
Step 3:
Add the prepared paste and
mix it. And let it come to a boil. If its splashes are flying high, then keep
it half covered and half open and let it cook. Keep running with a spoon in a
bitch and check that it does not stick to the bottom.
Step 4:
Fry all the water from it
till it becomes like a thick paste.
Step 5:
Now add all the spices
(turmeric, red chilli powder, coriander powder) and the remaining salt. While
adding salt, keep in mind that we had added salt even while roasting onion
tomatoes.
Step 6:
Mix it well and roast for 1
minute.
Step 7:
Now add water and make
curry and let it come to a boil.
Step 8:
Now add cream and mash the
kasoori methi together so that it tastes good. Mix.
Step 9:
Now add small potatoes and mix. And let it
cook for 5 minutes.
Step 10:
Finally add green coriander and mix it and
turn off the gas.
