Chicken Chaap is one of the best chicken dish from bengal and its a foodies delight.

Chicken Chaap Ingredients:

Almonds
Charmogoj(Melon seeds)
Poppy Seeds,
Cashew Nuts
Cardamom
Cinnamon
Cloves
Nutmeg
Mace
black paper
Cumin seeds
Coriander seeds
fennel seeds
1 kg chicken
400 gram onion paste
1.5 tablespoon Ginger paste
1.5 tbsp Garlic paste
1 tablespoon green chilli paste
1 tablespoon turmeric powder
1/2 tbsp red chilli powder
4 tablespoon biryani masala
1 tablespoon rose water
1 tablespoon Kevda water
1 cup poppy paste
1/2 cashew paste
1/2 cup curd
Refined oil
Ghee
Salt and sugar as per taste


Chicken Chaap recipe in details:

First, we make a paste of almonds, Charmogoj(Melon seeds), Poppy Seeds, Cashew Nuts.
Now, In a pan rost cardamom, Cinnamon, cloves, nutmeg, mace, black paper, Cumin seeds, Coriander seeds, fennel seeds for 2 to 3 minuts in medium heat. Grind this into a masala.

Mix all the above ingredients, masala and paste and put it on top of the chicken and keep it in the refrigerator for an hour. Now heat the oil in a pan and then add each piece in it and fry it well. After this, add all the marinating ingredients in it, put it in the same pan along with the chicken. Now add 2 cups of water and cook it for 25 minutes by covering the lid. If there is more water in the chicken, cook longer and dry it. Now your chicken chap is ready, serve it with hot rice.

3. In the chicken, keep onion, Garlic, Ginger, green chillies, turmeric, red chillies, salt, sugar, kewda water, rose water, half biryani masala, and grind masala to mix well and keep it for 1 hour.
4. Heat the oil and ghee in a pan and fry the chicken without spices. Fry this in a medium heat.
5. In another pan, put the remaining masala. Now add poppy seeds, cashew paste and curd to it and cook for a while and then add the chicken.


6. Add water and cook on low fame and bring it to a boil (aprox 25 minutes).
7. Now add 1 teaspoon sugar, 1 teaspoon Liquid saffron, 1 teaspoon Milk powder.
8. Add the remaining biryani masala and ghee thoroughly.

9. Now cook for 5 minutes and Chicken chaap is ready.
10. Turn off the gas and keep for some time and then serve it with rice and roti.
