Masala Dosa Recipe
Masala Dosa is one of the famous South Indian food.
Masala Dosa Ingredients:
Rice to prepare the mixture for dosa:
8 cup of rice
3 cups urad ki dal
3 cups urad ki dal
1 tsp fenugreek seeds
1 tbsp / salt to taste
As per the oil, to cook the dosa
For Masala:
6-7 potatoes - (boiled),
1 cup peas
2 onions (finely chopped),
2-3 green chilies - (finely chopped),
1 1/2 inch piece of ginger (grated),
1/4 teaspoon turmeric powder
1 tsp coriander powder
1/4 teaspoon dry mango powder
1/4 tsp red chilli
2 tablespoons oil
2 tablespoons green coriander (chopped),
Salt to taste
How to make Masala Dosa:
1. First wash the Urad dal, fenugreek and rice separately
and soak them in the night. In the morning, remove the lentil water and grind
it finely with fenugreek. After this, remove the rice water and grind it a
little thicker.
2. Now mix the two things together. After this, cover it
with salt and place it in a warm place and keep it for 12-13 hours. This will
make the mixture fermentable and double its size.
3. Now peel and mash the boiled potatoes. Also put oil in
the griddle and heat it. When oil is hot, add onion and fry it lightly. Then
add coriander powder, turmeric powder, red chilli powder, mango powder, salt,
green chilli and ginger to the griddle and fry for 1 minute.
4. After this, add peas and 2 tablespoons of water to the
spices and cover and cook till the peas become soft. Then add mashed potato to
the spices and fry for 2 minutes. After this, put green coriander in the griddle
and remove it from the gas and keep it aside.
5. Now it's the turn to make dosa. For this, first stir the
rice mixture once. If it is too thick, add some water and then mix it well. Now
heat the griddle and put one big-Spoon mixture on it.
6. When the dosa dries lightly, place 2 tablespoons of masala
(potato mixture) between this and spread it well. When the top surface of the
dosa starts to look shriveled, flip the dosa with the help of a spoon and then
remove it from the griddle and keep it in a plate.
7. Similarly, bake the rest of the dosa. After putting the
second dosa on the griddle, first reduce the flame and wipe it with a wet
cloth. While adding the mixture of dosa on the griddle, it should not be too
hot, otherwise it will not spread well on the griddle and the dosa will not
become crisp. In this way, bake all the dosa.
8. Now the method of making your Masala Dosa is ready to
serve.
