Prawn Malai Curry Recipe
Prawn Malai Curry Recipe is a famous in Bengali dish.
This Prawn
Malai Curry dish, famous in Bengali cuisine by the name of Chingri Machar Malai
Curry. This traditional dish is prepared on most special occasions.
Prawn Malai Curry Recipe Ingredients1 kilogram prawn
6 small cardamom
2 tbsp ginger paste
1 tsp chili powder
1 teaspoon garam
masala powder
2 teaspoons Ghee
1 lemon
1 tablespoon lemon
rind
150 ml refined oil
4 cloves
1/2 tablespoon cumin
seeds
2 teaspoons cumin
powder
1 teaspoon sugar
2 cups Coconut Milk
500 grams basmati rice
6 Kafir Lime Leaves
1/2 cup water
For marination
4 onions
1 teaspoon turmeric
2 tablespoons ground
cumin paste
2 pinch salt
For garnishing
6 flakes of coriander
leaves
1 teaspoon coconut
flake
Chingri Machar MalaiCurry
Step 1
To make Chingri or Prawn Malai Curry , clean the prawn with lukewarm water. Then leave the prawn with 1/4
teaspoons turmeric, pinches of salt and onion, ginger and cumin seeds to
marinate.
Step 2
Then prepare ginger
and onion paste in the mixer. Heat the ghee in a kadhai or deep pan, fry the
prawn in it till it turns golden brown and keeps it aside in a bowl.
Step 3
Now heat the oil in a
frying pan on a medium flame and add cardamom, cinnamon, cloves and bay leaf
to it. Then cook onion and ginger paste in it for 4 to 5 minutes on low
flame.
Step 4
After this, fry the
remaining turmeric, Kashmiri chilli powder, salt and garam masala with onions
for a few seconds. Now cook the coconut milk and 1/2 cups of water till it
comes to a boil.
Step 5
Then cut green chilies
with fried prawns in the gravy and cook for 5 to 6 minutes. After this, turn
off the gas, garnish the Prawn Malai Curry with coriander leaves and sprinkle
coconut flakes over them and keep them aside.
Step 6
After that, to make
Gondhoraj (lime) rice, put basmati rice in water for one hour in a big pot
and keep it aside.
Step 7
Now take water in the
pan as per your requirement and add a pinch of salt and a teaspoon of lemon
juice, a small piece of lemon peel, two kaffir lime leaves and a teaspoon of
ghee to the boiling water with the puffed rice. Finally serve Prawn Mala Curry with
Gondhoraj rice.
